Food contact: For a product to be considered a sanitizer for food contact surfaces, it should be capable of reducing the number of organisms on a surface by a minimum of 5 log10 (99.999%). This means that if there are 1,000,000 organisms on the surface, an effective sanitizer would remove at least 999,990 organisms, with no more than 10 organisms remaining.
